Margaret’s 1st Place Cook-off Chili Recipe

Ingredients: (Makes 10 to 12 servings)
4 pounds lean boneless beef chuck, trimmed of fat and cut into ¾-inch cubes
6 T. all-purpose flour
1 large onion, finely chopped
4 cloves garlic, minced or pressed
1 large tomato, peeled, seeded and chopped
1 or 2 canned or pickled jalapeno chilies, seeded and chopped
2 t. dry oregano
1 t. coarsely ground pepper
1-1/2 T. ground cumin
1 T. paprika
3 to 4 T. ground dried pasilla chilies
1 large can tomato sauce (about 15 oz)
1 cup beer
Salt to taste

Directions:
Coat beef cubes with flour. Shake off excess. In a 3-1/2 qt. or larger electric slow cooker, combine beef, onion, garlic, tomato, jalapeno chilies, oregano, pepper, cumin, paprika, and ground chilies; pour in tomato sauce and beer.

Cover and cook at low setting until beef is very tender when pierced (7 to 8 hours), stirring once or twice during last 1 to 2 hours of cooking.

Skim and discard fat from chili, if necessary. Season to taste with salt.

It all added up to one fabulous Halloween in Crestridge Meadows as friends and neighbors gathered on Wind Lake Circle for a festive Chili Cook-Off and Trick or Treating Hay Ride.

“We’ve had great feedback on this event,” says Mary Fondren, a member of the Special Events Committee. “Moving the chili cook-off to Halloween and adding the hay ride was a big hit.”

While all chili entries were delicious and quickly disappeared, the cook-off winner for 2009 was Margaret Robberson. Thank you, Margaret, for sharing your culinary talents…and perhaps the recipe?

Many thanks also go to Jamie Fransen for providing and driving the truck and trailer for the hay ride. And you can’t have a hay ride without the hay, which was provided by James Poston of Poston Seed and Feed in Terrell.
